I stopped making just a few appetizers for Cinco de Mayo after watching an entire tray disappear in ten minutes. These 17 are the ones that make people show up early and hover near the table before anything else is ready. Every single one is easy to make and faster to eat. The trick is making enough.

Chicken Sheet Pan Quesadillas

I cut these into small pieces so people can grab one without needing a plate. The edges come out crispy and the inside stays melty and full. These are the first thing I put out on Cinco de Mayo because they are gone before anything else hits the table.

Halloumi gets golden on the outside and stays firm and chewy on the inside, making it easy to pick up and eat without making a mess. I serve them straight off the heat. People try one, then reach back for another without saying a word.

These come out of the oven with golden tops and a soft, cheesy inside that holds together when picked up. I leave them in the pan for a minute so they firm up just enough. They get taken quickly, and people always ask what they are.

Thick, smooth, and full of flavor with a little heat that builds slowly. I spread it wide on the plate instead of leaving it in a pile, so it is easy to scoop from any side. A Cinco de Mayo table without something like this feels like it is missing its starting point.
