Most eye of round recipes tell you to go low and slow, which is how you end up with gray meat and no crust. My air fryer eye of round roast does the opposite, searing hard first and finishing gently, so the outside darkens while the center stays pink. The best part? It costs less than a single steak and feeds six.

Originally, the eye of round was not its own cut of beef. It was simply part of the round, the big rear leg of the cow. Cooks salted it, dried it, or dropped it into long stews and pot roasts.

That was the only way to make a lean working muscle worth eating. Butchers started pulling it out on its own once cuts became standardized last century, alongside the top round, bottom round, and rump.

Once it had a name of its own, it picked up a reputation. It's a single muscle, which is why it looks like a small tenderloin and costs so much less.

Delis sliced it thin for lean roast beef, while home cooks at home mostly overcooked it into something dry and gray. That's still what this cut is known for, and it is exactly what the air fryer fixes.

Buy a roast that lies flat in the basket: A 2- to 3-pound roast fits in most air fryers in one piece. Cook time is roughly 12 to 15 minutes per pound, so a longer roast needs more than the recipe says.

Read the thickest part, not the tapered end: The narrow end always runs hotter, so judge doneness by the middle with a meat thermometer. Give the end slices to whoever likes them more done.

Chill it before slicing for sandwiches: A cold roast cuts far thinner than a warm one. That's the only way to get deli slices at home.

Dry and oil the roast

  • Pat the roast dry with paper towels, then rub it all over with oil.

Preheat the air fryer

  • This is the sear, and it's where the crust comes from, so do not cut it short.
    • Leave a little room around the roast so the hot air can move.

Lower the heat and finish

  • Reduce the heat to 325 degrees and cook for 20 to 25 more minutes.
    • Start checking the internal temperature at 20 minutes, aiming for 125 degrees for rare, 135 degrees for medium-rare, or 145 degrees for medium.
    • Slide the thermometer into the thickest part of the roast and ignore the small slit it leaves behind.

Tent it loosely with foil, and let rest 10 to 15 minutes before slicing.
  • The roast keeps cooking and climbs a few more degrees while it sits, which is why you pull it early.
    • Then slice thinly, because a dark crust cut thin against the grain is what turns this cut of beef into tender roast beef instead of a chewy one.
  • This roast will never go fork tender the way a chuck roast does. And it's not supposed to.
    • Mine comes off the board at medium rare almost every time, and that is the flavorful, pink center I want.

Keep leftover roast beef in an airtight container in the fridge for up to 4 days. Slices dry out faster than whole pieces, so store what you can uncut and cut as you go. A spoonful of gravy or a little of the resting juice over the top keeps the meat from tasting flat the second day.

To reheat, warm the slices in the air fryer for 5-10 minutes on low, or eat them cold in a sandwich, which is what usually happens in my house. You can also freeze the sliced roast for up to three months if you wrap it tightly first. Cold slices with a few roasted vegetables have saved more weeknight dinner recipes in this house than I care to admit.

Why did my roast turn out incredibly tough?

You either cooked it past medium or sliced it with the grain. Eye of round has long muscle fibers running the length of the roast, so find their direction, turn the roast, and cut thinly across them.

My roast looks gray and has no crust. What happened?

The surface was wet going in, and moisture has to steam off before browning can start. Pat the roast dry until the paper towels come away clean, then oil it and preheat the air fryer for the full 3 to 5 minutes.

Why is the outside burning before the inside cooks?

The heat probably never came down to 325 degrees after the sear, or your air fryer runs hot. Drop the temperature on time, and let a cold roast sit out for 20 minutes before seasoning so the center is not playing catch-up.

Notes

  • Pat the roast dry before oiling and seasoning. This helps everything adhere and gives a better crust.
     
  • Use a meat thermometer. Eye of round moves from perfectly tender to overcooked quickly, and the temperature will rise a few more degrees while resting, so pull it early.
     
  • Always slice against the grain. This cut is naturally tough, and cutting against the grain is what keeps it tender.
     
  • Don't skip the high-heat sear at the start. That first 15 minutes at 375 degrees is what caramelizes the crust.
     
  • For the thinnest slices, chill the roast before slicing. Especially useful for sandwiches.
     
  • Substitutions: plain salt plus garlic powder for the garlic salt, any steak rub or a mix of coarse pepper, salt, and paprika for the Montreal seasoning, canola or vegetable oil or melted butter for the olive oil, and smoked paprika or a pinch of chili powder in place of regular paprika.
     
  • Add dried rosemary or thyme to the seasoning mix for an herb-crusted version, or rub the roast with fresh minced garlic before seasoning for a stronger garlic flavor.
