Most Dr. Pepper brownies stop at a splash in the batter. After a dozen rounds of testing, I worked out a glossy chocolate sauce that cooks in one small pan while the brownies bake. It takes ten minutes of real work from start to finish, which is why I reach for this recipe on busy weeknights.

Dr Pepper was first created, made, and sold in Waco, Texas, and it has been a Texas staple ever since. Home cooks love cooking with Dr Pepper, adding it to everything from pulled brisket to pancakes. Its subtle cherry flavor also pairs especially well with chocolate, which is where these brownies come in.

The Dr Pepper brownie trend caught on a few years ago, when home bakers started stirring a quarter cup of soda into their usual mix.

The bubbles give each square a lighter, moister texture, and some bakers even swap in cherry vanilla for extra flavor. I added a warm Dr Pepper sauce to the idea, and now this pan comes out of my oven almost every week.

A slice of chocolate cake with whipped cream, chocolate syrup, and a cherry on top, reminiscent of rich Dr. Pepper Brownies, is served on a small white plate.

The Dr Pepper adds a soft caramel note and a light hint of cherry that sits right under the chocolate. You get deep chocolate taste in every bite, with chewy corners and a soft, gooey middle.

The warm sauce soaks into the top and turns glossy as it cools, so each square feels a little fancier than it should. These brownies have become a regular in our dessert recipes rotation, right next to my Easy Cherry Cobbler Recipe.

My kids think adding Dr Pepper to dessert is the funniest thing they have ever heard, so they fight over who gets to pour it. My husband asked for the sauce after the first batch, because he likes his squares warm with a scoop of vanilla ice cream melting on top.

Around the holidays, I set a plate of these out next to my Pecan Pie Fudge Recipe, and both trays are empty before the coffee is ready.

Two stacked chocolate cake slices topped with whipped cream, a rich chocolate drizzle, and a cherry on a white plate evoke the decadent appeal of Dr. Pepper Brownies.

Delicious homemade brownies from scratch take real work. You melt butter and chocolate chips, beat brown sugar and eggs until pale, and then wash every bowl in the house.

This easy brownie recipe skips most of that with the help of a boxed brownie mix, and a splash of Dr Pepper handles the rest. When I have a free afternoon, I bake my Cast Iron Skillet Chocolate Chip Cookie Cake instead, which disappears just as fast.

Dr Pepper brownies with brownie mix are my answer whenever I need a sweet treat for a birthday, a bake sale, or a regular Friday night. Here is what you need to make the easiest brownies and the sauce, plus a few easy ways to change them up.

Ingredients

Ingredients for Dr. Pepper Brownies are laid out on a white surface: cake mix, a Dr Pepper bottle, two eggs, butter, cocoa, vanilla, oil, and sugar.

One box of fudge brownie mix gives these squares a dense, chewy center. However, any of your favorite brownie mixes works just as well. Dr Pepper replaces the water, adding moisture along with its sweet mix of cherry, vanilla, and a soft caramel finish. This recipe uses regular Dr Pepper, since diet soda can leave a strange aftertaste once baked.

Unsweetened cocoa powder gives the sauce its deep, dark chocolate color and keeps the sugar and soda from tasting too sweet.

Top Tips for Making Dr Pepper Brownies

Let the fizz settle before measuring: Foam takes up space in the measuring cup, so give the soda a minute to calm down for an accurate half cup.

Use a metal baking pan for chewier edges: Metal heats faster than glass, giving you crisp corners while the center stays soft.

Try Cherry Dr Pepper for a twist on traditional brownies: The extra cherry makes each square taste a lot like black forest brownies.

Prep the Pan

  • Preheat the oven to 350 degrees and line a 9x9 inch baking pan with parchment paper.
    • Leave a little paper hanging over two sides so you can lift the baked brownies out in one clean slab.
    • If you only have a glass baking dish, lower the heat to 325 degrees. Glass holds heat longer and can dry out the edges.

Mix the Batter

A glass measuring cup with bubbly brown yeast mixture, reminiscent of the rich hue found in Dr. Pepper Brownies, and dry yeast on a white marble surface.
Mix together the box of brownie mix, vegetable oil, eggs, and vanilla extract in a large bowl.
A saucepan with cocoa powder, melted butter, and bubbles on a white surface, ready to be mixed for delicious Dr. Pepper Brownies.
Then stir in Dr Pepper and butter until the brownie batter turns smooth and glossy.
  • Quit stirring once the last streaks of dry ingredients disappear. Extra mixing pulls more air into the batter and can make the brownies cakey.

Fold in Chocolate Chips (Optional)

For a pan loaded with chocolate, fold in ½ cup semi-sweet chocolate chips or chopped pecans. Do this right before the batter goes into the pan. Toss the chocolate chips in flour first, so they stay spread out instead of sinking to the bottom. Save a few to scatter over the top, too. White chocolate chips also work instead of semi-sweet chocolate chips if your crowd likes things extra sweet.

Bake Until Just Set

Pour the batter into the prepared pan, spread it into the corners, and bake for 30 to 35 minutes.
A rectangular baking dish lined with parchment paper contains a large, uncut Dr. Pepper Brownie, its rich chocolate surface hinting at the unique flavor twist inside.
Start checking at 30 minutes by poking a toothpick into the center. Then pull the pan once it comes out with a few moist crumbs.
  • The brownies keep setting from the pan's heat. That extra time is what makes these brownies fudgy in the middle.

Cook the Dr Pepper Chocolate Sauce

  • Combine Dr Pepper, butter, cocoa powder, and sugar in a small saucepan while the brownies cool.
  • Bring it to a gentle boil over medium heat, whisking the whole time. Then let it bubble for three to four minutes until it coats the back of a spoon.
    • Since the sauce also uses Dr Pepper, the chocolate and Dr Pepper flavors show up twice. You get them once in the brownie and once on top.

Stir in the Vanilla and Salt

  • Take the saucepan off the heat and stir in the vanilla extract and a pinch of salt.
    • That tiny bit of salt wakes up the cocoa and helps the sauce taste less sugary.
  • For a thicker sauce, add two tablespoons of chocolate chips now and let the heat melt the chocolate for a minute. The melted chocolate chips make it extra glossy.

Slice and Drizzle

Two pieces of chocolate cake, reminiscent of rich Dr. Pepper Brownies, are served with fluffy whipped cream, chocolate syrup, and a cherry on top, with a drink in the background.

Lift the slab onto a cutting board, slice it into 12 squares, and drizzle the warm sauce over the top. Slightly cooled brownies hold clean edges and soak up the sauce better than piping-hot ones. Add a scoop of ice cream for decadent brownies with rich chocolate flavor from edge to center.

Storage

Dr. Pepper Brownies topped with whipped cream, chocolate syrup, and a cherry on a white plate.

Store the brownies without sauce in an airtight container for up to four days. They stay soft and chewy in the container at room temperature, and the flavor deepens by day two. For longer storage, wrap the squares tightly and freeze them for up to three months.

Keep the Dr Pepper chocolate sauce in a jar in the fridge for up to one week. Warm it gently in the microwave in short bursts, stirring in between, until it pours again. If it gets too thick to drizzle, spread it over the brownies like frosting.

FAQs

Why are my brownies flat, greasy, and dense?

Too much oil is usually the culprit, so measure it level in a liquid measuring cup. Overmixing also knocks the air out and leaves the brownies heavy. Whisk only until the dry streaks disappear, and make sure the oven is fully preheated to 350 degrees before baking.

How can I get a clean release from the pan?

Line the pan with parchment paper and leave a few inches hanging over two sides. Let the brownies cool for at least 30 minutes so the center sets, then lift the whole slab out. Slice with a sharp knife, wiping it clean between cuts.

Why did the soda pool on top of the batter while baking?

This happens when the Dr Pepper sits on the batter instead of mixing all the way in. Pour it in slowly while you whisk, and keep going until the batter looks smooth and glossy with no liquid streaks. Then get the pan into the oven right away.

Equipment

  • 9x9 inch baking pan
  • Parchment paper
  • Large mixing bowl
  • Whisk
  • Spatula
  • Small saucepan
  • Toothpick
  • Cutting board and sharp knife

Ingredients

Brownies:

  • 1 box fudge brownie mix
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ cup Dr Pepper not diet
  • 1 teaspoon vanilla extract

Dr Pepper Chocolate Sauce:

  • ½ cup Dr Pepper
  • ¼ cup unsalted butter
  • 2 tablespoons unsweetened cocoa powder
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees and line a 9x9 inch baking pan with parchment paper.
  • Whisk brownie mix, oil, eggs, Dr Pepper, and vanilla until smooth and glossy, then spread evenly in the pan.
  • Bake 30 to 35 minutes, until a toothpick comes out with a few moist crumbs. Cool slightly.
  • Combine Dr Pepper, butter, cocoa powder, and sugar in a small saucepan. Boil gently over medium heat, whisking constantly, for 3 to 4 minutes until slightly thickened.
  • Off the heat, stir in vanilla and a pinch of salt.
  • Slice into squares, drizzle with warm sauce, and serve with ice cream if desired.

Notes

  • Don't overbake. The brownies continue to set as they cool, so pull them once the toothpick shows a few moist crumbs rather than coming out fully clean.
  • Dr Pepper adds a subtle caramel-cherry note that makes boxed brownie mix taste homemade. Cherry Dr Pepper works too, for an even stronger cherry flavor.
  • Drizzle the sauce while it's still warm for the glossiest finish. If it cools and thickens too much, spread it over the brownies like frosting instead.
  • Stir ½ cup chopped pecans or walnuts into the batter for a nutty version.
  • Store brownies without sauce in an airtight container up to 4 days, or freeze up to 3 months. Keep the sauce refrigerated up to 1 week and reheat gently before using.
