  • 1 kg ground turkey
  • 2 onions finely chopped
  • 2 carrots finely diced
  • 2 celery stalks finely diced
  • 4 garlic cloves minced
  • 200 ml dry white wine
  • 800 g San Marzano tomatoes crushed
  • 250 ml whole milk
  • 2 bay leaves
  • 1 sprig fresh rosemary
  • 50 g unsalted butter
  • 50 ml extra virgin olive oil
  • Salt and freshly ground black pepper

Instructions

  • Sautee onions, carrots, celery, and garlic until in oil over medium heat softened.
  • Add turkey, cook until browned.
  • Deglaze with wine, reduce by half.
  • Add tomatoes, milk, bay leaves, and rosemary. Simmer for 2 hours.
  • Remove herbs, stir in butter.
  • Season to taste.
