French Onion Chicken and Rice Casserole

Equipment

Ingredients

  • 3 tablespoon salted butter
  • 3 tablespoon vegetable oil
  • 4 large onions sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups white rice
  • 1 cup heavy cream
  • 3 cups cooked chicken shredded
  • 16 oz Swiss cheese shredded

Instructions

  • In a large pan, melt butter with oil over medium-low heat. Add onions, coat with butter mixture. Let sit for 10 minutes without stirring.
  • Stir occasionally for another 20-30 minutes until onions are caramelized.
  • Add salt, pepper, and garlic. Stir for 30 seconds.
  • Add chicken broth, Worcestershire sauce, and rice. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  • Preheat oven to 350°F.
  • Stir in heavy cream and chicken.
  • Transfer mixture to a greased 9x13 baking dish. Top with shredded Swiss cheese.
  • Bake for 10 minutes or until cheese melts.
  • Garnish with parsley if desired. Serve hot.

Notes

Store in an airtight container in the fridge for 2-3 days.
For browned cheese, broil for the last few minutes.
Add red pepper flakes for extra heat.
If excess liquid remains after cooking rice, simmer uncovered for 5 more minutes.
Use rotisserie chicken for a quicker prep.
