Matzo and Egg Breakfast Pizza

Thanks to this easy matzo and egg breakfast pizza recipe, you can finally eat pizza for breakfast! This amazing pizza combines matzos, eggs and optional turkey bacon for a twist on the traditional American breakfast.

Ingredients

  • 2 matzo sheets
  • 3 eggs
  • 2 tablespoons milk or water
  • Salt and pepper to taste
  • 2 tablespoons butter or Earth Balance or olive oil
  • ½ cup tomato sauce
  • ½ cup shredded cheese
  • Dried oregano optional
  • Chili flakes optional
  • 2-4 slices cooked bacon or turkey bacon crumbled (optional)

Instructions

  • Wet matzo under running water for 30 seconds.
  • Break matzo into 1-2 inch pieces in a large bowl.
  • Mix eggs, milk, salt, and pepper in a separate bowl.
  • Pour egg mixture over matzo pieces and combine.
  • Heat butter in a skillet over medium-high heat.
  • Add matzo-egg mixture, cook for 5 minutes without stirring.
  • Loosen edges with a spatula and flip in one piece.
  • Spread tomato sauce on top.
  • Add shredded cheese and crumbled bacon (if using).
  • Cover and cook for 5 more minutes until cheese melts.
  • Sprinkle with oregano and chili flakes if desired.
  • Serve immediately.

Notes

For gluten-free option, use gluten-free matzo and soak for only 20 seconds.
Add other toppings like mushrooms or sundried tomatoes before the cheese if desired.
