Equipment
- Slow Cooker
- Sheet pan
- Knife
- Meat thermometer
- Paper towels
- Small mixing bowl
Ingredients
- 2½ pounds pork tenderloin two pieces
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon dried parsley
- 3 garlic cloves minced
- ½ cup beef broth
- ½ cup BBQ sauce
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 2 to 4 teaspoons cornstarch
Instructions
- Pat the tenderloins dry with paper towels and season with salt, pepper, cayenne, and dried parsley. Transfer to the slow cooker.
- Mix the garlic, beef broth, BBQ sauce, soy sauce, brown sugar, and cornstarch together in a bowl. Pour over the tenderloins.
- Cover and cook on low 3 to 4 hours or high 2 hours, until the tenderloins reach an internal temperature of at least 145 F.
- Slice and top with parsley.
Notes
- Slow cookers heat differently, so cooking times are estimates. Use a meat thermometer for the right doneness.
- Use 2 teaspoons cornstarch for a thinner sauce and 4 teaspoons for a thicker sauce. Thin the sauce with more broth if needed.
- Cook with baby potatoes, red potatoes, or Yukon gold potatoes, or serve over mashed potatoes. Carrots and onions are also good additions.
