Browned kielbasa slices, sweet peppers, and soft onions cooked together in one basket in about 20 minutes. I have cooked kielbasa every way there is: on the stove, in the oven, on the grill, and the air fryer wins every time. This air fryer kielbasa saves me on nights when nobody wants to wait for dinner.

Polska kielbasa, or simply kielbasa, is a Polish sausage with roots dating back to 1400s Poland, when the royal court pushed autumn and winter hunting to keep the sausage supply up. Back then, it was food for nobles and knights, who carried the long links while traveling because they kept so well.

Kielbasa is made from pork, and smoking and curing it let it last for weeks without spoiling. By the 1800s, it had spread well beyond Poland. Today, the rings of Polish sausage on American shelves come fully cooked. That means you're really just warming and browning it.

The taste is smoky and salty, with the peppers and onions turning sweet as they soften. The kielbasa comes out crispy on the outside and stays juicy inside, which is what finally pulled me away from the frying pan.

A little mustard on the side keeps it from feeling heavy, and it doubles as a dipping sauce when I set the slices out as an appetizer. This is my favorite way to cook sausages. On slower days I turn to my Crockpot Sausage and Potatoes instead, which leans on a different sausage and takes its time in the pot.

I held out on buying an air fryer for a long time. My kids wore me down, and now the thing lives on the counter because we cook something in it almost every day. This easy air fryer kielbasa recipe was the one that won me over, mostly because it asks so little of me. You slice up the kielbasa, toss the vegetables, and the air fryer handles the rest while you set the table. That quick and easy air fryer rhythm is why it stays in our rotation.

Ingredients

Look for a ring of Polish kielbasa sausage, the smoked kind sold near the hot dogs. Again, it's already cooked, so you're really just browning it. A yellow onion and a red bell pepper turn sweet and soft in the same basket as the sausage, which makes this close to air fryer sausage and peppers with a Polish twist. Smoked paprika fills in around the natural smoke and gives the vegetables their color. Go easy on the salt, since most smoked sausage brings plenty of its own.

Skip oiling the sausage: Kielbasa releases its own fat as it cooks, so save the olive oil for the onion and pepper and let the slices brown in their own drippings.

Cut diagonally: Angled pieces put more surface against the hot air, so you get crispy edges on every piece of sausage.

Give them room: Spread the slices in a single layer and air fry in batches if your basket is small, because crowded kielbasa steams instead of browning.

This easy air fryer recipe gives you browned kielbasa, soft peppers, and sweet onions in about 12 minutes in the air fryer, with mustard on the side. Here is how I make sliced kielbasa in the air fryer step by step.

Preheat the air fryer

  • Set the air fryer to 375 degrees and let it run for three minutes.
  • Preheat your air fryer this way and a hot basket starts browning the sausage the moment it lands.
    • Skip this and the kielbasa cooks unevenly. It will become pale on the outside instead of crispy.

Slice up the kielbasa

    • Keep the slices of kielbasa close in size so they all finish together.

  • You can toss the kielbasa in with them if you want more seasoning on the meat, though it browns fine on its own.
  • Taste before you salt. Kielbasa is already cooked and well seasoned to begin with.
    • I start with half and let everyone add more at the table.

  • Arrange the slices in the air fryer in a single layer so hot air can reach every side.
    • If your air fryer uses a tray, place the kielbasa across the air fryer tray the same way.

  • Check on the kielbasa early. Many rings are perfectly cooked at 8 to 10 minutes if your air fryer runs hot.
    • The sausage should have that crispy air fryer edge.

Serve

Rice, buttered noodles, or roasted potatoes all work as side dishes, and roasted potatoes are what I serve with kielbasa most often.

Serve it with sauerkraut for a traditional pairing that balances the rich, smoky sausage. Cook once, and you have sandwiches for tomorrow.

Storage

Let the cooked kielbasa cool, then keep it in an air tight container in the fridge for up to four days. Air fried kielbasa can be stored this way without losing much. Do note that the peppers soften more as they sit, which some people mind. Store the mustard separately so nothing turns soggy overnight. Cook a double batch and you have lunches for the week.

To reheat, put it back in the air fryer basket at 350 degrees for three or four minutes. Sausage in the air fryer reheats better than almost anything else, though the microwave will turn the slices rubbery. Air-fried kielbasa freezes well for up to two months.

Why did my whole kielbasa burst?

The casing trapped steam with nowhere to go. When you air fry a whole kielbasa, the juices inside heat up fast and push against the skin until it splits. Prick the ring in a few spots with a fork before it goes in. The steam will escape quietly instead of blowing out the side.

How do you keep it juicy?

Watch your time more than your temperature. Kielbasa is already cooked, so you are only browning it, and every extra minute past that dries it out. Pull it once the edges look deep and caramelized, and let the slices rest a minute before serving so the juices settle back in instead of running out.

Why did my kielbasa turn out rubbery?

That usually means it cooked too long or too hot. Since the sausage starts out fully cooked, pushing it well past browning tightens the meat and turns the bite chewy. Drop your temperature a little and check early, around 8 to 10 minutes, and you will catch it while it is still tender.

Can I cook frozen kielbasa in the air fryer?

You can, though I thaw mine first when I remember. To cook frozen kielbasa in the air fryer, add a few minutes to the time and shake the basket more often so the pieces cook evenly. Frozen kielbasa in the air fryer browns better once the surface dries out, so give it space and do not rush it.
