Instructions

  • Add the 3 cups of white chocolate chips as soon as it comes out of the microwave, stir until completely melted. Add the vanilla extract, the maple flavoring and powdered sugar, stir until it’s completely combined and thick.
  • Pour into the lined 8x8 and sprinkle all the toasted pecans on top, lightly tap them so they stick better. Place in the fridge for 2 hours. Lift the parchment paper out of the 8x8 and slice the fudge, serve and enjoy!

After years of weeknight cooking for my family, I've learned that the best dinners are the ones where technique does the heavy lifting and this crock pot pork roast with potatoes and carrots has become one of my most-made recipes because it requires almost no effort but gives me consistent results. 

The boneless pork shoulder is the key to making this work so well. I've tried leaner cuts like pork loin, but they just don't have enough marbling to stay moist through 8 hours of slow cooking. The pork shoulder has just the right fat content to break down and turn tender while the seasoning blend seeps into both the meat and vegetables. Honestly, the whole house smells amazing by the time dinner rolls around.

What I've learned from making this dozens of times is that choosing the right vegetables matters. Baby potatoes and carrots have the density to cook right alongside the pork without turning to mush, something softer vegetables can't do. The liquid creates a light gravy that coats everything, and you have flexibility with substitutions depending on what you have on hand.

Don’t skip seasoning generously: Because this cooks low and slow, the seasoning has time to penetrate deeply. Be generous with your spice blend so both the pork and vegetables are well flavored.

Layer strategically for best results: Place the pork roast on top of the vegetables rather than underneath. This allows the juices to drip down and flavor the potatoes and carrots as they cook.

Resist opening the lid: Each time you lift the lid, heat escapes and adds extra cooking time. Let the crock pot do its job undisturbed for the most consistent results.
