Rectangular pieces of cheesy Italian Sausage Sheet Pan Pizza with pepperoni and sausage are arranged on a wooden board, a pizza cutter nearby.

This Italian Sausage Sheet Pan Pizza uses one hot pan to give the dough a crisp, golden bottom without any special equipment. The sausage gets seasoned with fennel and garlic, then baked under bubbly mozzarella, tomato sauce, and pepperoni. It's the kind of homemade pizza I can make on a busy night without much fuss.

I used to think homemade pizza needed more effort than I was willing to give it on a weeknight. I would end up with dough that refused to stretch, flour all over the counter, and a kitchen that looked like I had been baking all afternoon. Flipping through an old stack of vintage cookbooks, I started wondering how people made family pizzas without all the gadgets and fuss.

That put me in the mood to try something simpler. I made the dough straight on a sheet pan, then added sausage, sauce, cheese, and pepperoni before sliding it into the oven. The bottom came out crisp, and the cheese was bubbly around the edges. I realized I had been making homemade pizza much harder than it needed to be.

The best part is the way it tastes. The sausage cooks up rich and peppery, the tomato sauce stays bright under the cheese, and the bottom turns crisp and golden. Fennel seeds in the meat give it that pizzeria smell that pulls everyone into the kitchen before I even call them in.

When I want that same one-pan trick for dinner instead of pizza night, I lean on my Sheet Pan Sausage, Kale, and Sweet Potatoes. It has that same practical, one-pan appeal, just with a completely different set of flavors.

My family is always happy when this comes out of the oven, especially because I cut it into squares that are easy to grab and share. When I want those same pizza flavors in something a little quicker, I make my Baked Homemade Pepperoni Pizza Bagels instead. They are especially handy for lunch or an after-school snack when everyone is hungry.

My husband taught me to keep the meat right up over the cheese instead of pressing it underneath. This way, it crisps a little in the heat. Now the two of us quietly compete for the corner pieces, where the base runs a bit thicker, and the cheese has gone deep golden.

If you like this pizza, you will probably love my Hot Honey Pizza Dip too. It takes those same pepperoni-and-cheese flavors and turns them into a warm, scoopable snack for another night. So here’s how I make this Italian sausage pizza recipe at home. I’ve included all the little tips that have helped me get it right every time.

Ingredients

Pizza dough, mozzarella, pizza sauce, sausage, pepperoni, breadcrumbs, and herbs on a white background.

You only need a short list for this recipe. Mild Italian sausage gives the pizza its savory, fennel-rich flavor and makes the topping much more substantial. Pizza dough creates the chewy center and crisp edges that make this a proper sheet pan pizza. Pizza sauce adds bright tomato flavor that cuts through the rich toppings, while mozzarella melts into a creamy, stretchy layer over the whole pie.

Top Tips for Italian Sausage Sheet Pan Pizza

Heat the pan first: Sliding the dough onto a screaming hot pan is what gives you a crisp bottom instead of a pale, wet one.

Cook the meat until it's deep brown: A well-drained mix holds its bite and won't steam and soften once it settles under the cheese.

Go easy on the sauce: A thin, even layer keeps the dough from turning wet, so the bottom can puff up and stay crispy right where it counts.

How to Make Italian Sausage Sheet Pan Pizza

This easy sheet pan pizza recipe comes together in one pan, with a crisp bottom, bubbly cheese, and plenty of seasoned sausage. These step-by-step instructions include a few small tricks that make the pizza dough easier to handle and help keep the crust from turning soggy.

Heat the pan

  • Preheat the oven to 450°F and slide the empty sheet pan onto the middle rack while it heats. This is the one step you truly can't skip.
    • A blazing-hot pan sets the bottom the second the dough lands on it. So give it a full 10 minutes to reach temperature.

Let it go for 6 to 8 minutes until fully cooked.
  • Break up the sausage with a spoon as it cooks, so you get small, even pieces instead of big clumps.
  • Drain any excess fat so the pizza does not turn greasy.

Stretch the dough

roll or stretch it into a rough rectangle about the size of a 9-by-11-inch pan.
  • Let store-bought dough sit at room temperature for 20 to 30 minutes first if it's cold, since it will stretch much more easily.
    • If you need to roll out the pizza dough or stretch it by hand, work gently and give it a few minutes to rest if it keeps snapping back.

Get the pan ready

  • Carefully pull the hot pan out and drizzle it with olive oil. Tilt it so the oil coats the bottom and creeps up the sides a bit.
    • Lay the dough in and stretch it to fit the pan, then press it gently toward the corners.
    • Work quickly because the pan is hot and the dough starts cooking the moment it hits the pan.

Add the sauce and cheese

Spread the tomato pizza sauce over the dough.

It should be in a thin, even coat, leaving a little bare border around the outside.
  • Sprinkle the garlic powder and oregano over the sauce.

Cook until golden

Enjoy a delicious Italian Sausage Sheet Pan Pizza—rectangular deep-dish pizza with melted cheese, savory pepperoni, flavorful Italian sausage, and fresh herbs baked to perfection on a baking tray.
Bake for 18 to 20 minutes, until the crust is deep golden brown and the cheese is bubbly and starting to blister in spots.
  • Every oven runs a little differently, so start peeking around the 16-minute mark.
    • Watch for the cheese to melt completely and the corners to darken without burning.

Finish and slice

Scatter grated parmesan and red chili flakes over the top while it is hot. Let the pizza cool for 5 minutes so the cheese sets and the slices hold together. Then slice and serve in 12 squares, with a little fresh basil on top if you like.

Storage

Keep leftover pizza in an airtight container in the fridge for up to four days. Let the pizza cool all the way first, so trapped steam does not sit against the base and leave it soggy overnight. If you are stacking slices, tuck a piece of parchment between them so the toppings do not stick and pull off.

To reheat the pizza, skip the microwave whenever you can. Warm the slices on a baking sheet until hot. You can also set them in a dry skillet on the stove for a few minutes, until the bottoms are crisp again and the cheese is hot and gooey. Warmed that way, the base comes back to life instead of turning to rubber.

How do I keep the middle from getting soggy?

Keep the sauce layer fairly thin so it does not add too much moisture to the dough. The hot pan helps the bottom start cooking as soon as the dough goes in, which is key for a crisp base. Avoid piling on too many wet toppings, especially in the center. Let the pizza bake until the cheese is fully melted and the middle looks cooked, not wet.

How do I stop the dough from shrinking back?

Let the dough come to room temperature for 20 to 30 minutes before stretching. Cold dough tends to spring back because the gluten is still tight. Press and stretch it gently rather than forcing it into the corners. If it keeps pulling away, let it rest for another 5 to 10 minutes and try again.

How do I get crispy “Detroit-style” cheese edges?

Spread the mozzarella all the way to the edges of the pan, so some of it touches the sides. As it bakes, the cheese melts against the hot metal and develops those browned, crispy edges. A well-heated pan helps with this, too. Give the pizza enough time to brown before taking it out, even if the center already looks done.
