Vintage Southern Pimento Cheese Dip

Fresh cheddar cheese, tangy cream cheese, sweet pimentos, and just enough cayenne pepper come together in this creamy pimento cheese recipe that I brought to every single cookout last summer. It takes about ten minutes to mix, chills beautifully, and works just as well spread on crackers as it does tucked into a sandwich.

[feast_advanced_jump_to]

Southern pimento cheese feels so tied to the South that I assumed it had always been there. It actually started as a Northern spread made with cream cheese and imported Spanish pimentos before Georgia farmers made the peppers widely available.

Southern cooks later incorporated cheddar and mayonnaise, creating the creamy cheese spread we know today. As an immigrant, I certainly didn't encounter it at church picnics or family reunions. But once I started digging through old Southern recipes, it was impossible to miss.

This is classic pimento cheese, rich and a little sharp, with the cheddar carrying most of the flavor and the mayo keeping it soft and creamy. The pimentos bring a mild sweetness and that familiar red color, while the cayenne pepper adds just enough warmth in the background.

I love it scooped onto crackers, but it also works as a sandwich spread or a topping for fried green tomatoes. When I'm putting together an appetizer table, it usually ends up beside my Vintage Bacon Ranch Cheese Ball, and neither tends to leave leftovers.

My husband was sold after the first bite. Growing up, he was perfectly happy with cheddar and crackers, so turning that combination into a creamy cheese spread was not a hard sell. My kids took longer. They spent more time inspecting the little red pieces than actually eating them.

Now my son asks for a pimento cheese sandwich on soft white bread, and my daughter prefers hers piled onto Ritz crackers while she raids the fridge between activities. They are just as enthusiastic when I put out my Vintage Southern Cream Cheese Ball With Bacon Bits, which probably explains why I always need extra crackers on hand.

What keeps me making this southern cheese recipe is how dependable it is. I can make homemade pimento cheese the night before guests arrive, cover and refrigerate it, and know it will be ready when I need it. It also happens to be one of those recipes that somehow tastes even better after a few hours in the fridge, much like my Vintage Pineapple Cheese Ball With Pecans.

A bowl of vintage Southern pimiento cheese dip topped with jalapeño slices, served with crackers, tomatoes, and cucumber sticks.

I have made this for family gatherings, for Memorial Day appetizers while the grill is heating up, holiday snack tables, and casual summer get-togethers. It's perfect for a Kentucky Derby party. And every single time, people come flocking to it. After plenty of batches and a few small tweaks, this is the version I keep coming back to. Here is everything that goes into it.

Ingredients

Four bowls of cream cheese, shredded cheese, mayo, red peppers, and a small dish of spices on a gray surface—everything you need for a classic Southern Pimiento Cheese dip.

Start with cream cheese that is nice and soft so it blends smoothly, and grate a block of cheddar cheese yourself, since freshly shredded cheese mixes in far better than pre-shredded cheese. The pimentos, also called pimento peppers, are sweet roasted red peppers from a jar, milder than a raw red bell pepper, so you just drain and chop them. Mayonnaise pulls it together, and most Southern cooks swear by Duke's. A pinch of cayenne is my secret ingredient, with pepper jack or diced jalapeño for extra heat if you want it.

Top Tips for Vintage Southern Pimento Cheese Dip

Skip the light ingredients: Full-fat cream cheese and mayonnaise give this dip its rich, creamy texture. The lighter versions tend to loosen as they sit, especially after a night in the fridge.

Use a light hand when mixing: Once the cheddar goes in, stir just until everything is combined. Overmixing can turn the texture dense instead of leaving those little pockets of cheese throughout the spread.

Let the pimentos drain well: A few extra minutes in a colander can make a surprising difference. Excess liquid from the pimentos can thin the spread and make it less creamy after chilling.

How to Make Vintage Southern Pimento Cheese Dip

This southern pimento cheese recipe could not be easier. It takes one bowl, five ingredients, no stove time, and a short chill before you dig in. Here is how I make pimento cheese.

Shred the cheese

Grate the sharp cheddar fresh off the block instead of buying shredded cheddar in a bag. Bagged, pre-shredded cheese is coated to stop clumping, so it never melts in the way freshly grated cheese does, and doing your own gives the best flavor by a mile. A box grater works, or a stand mixer if you would rather save your arm.

Mix the creamy base

A bowl of shredded cheese and creamy Cheese Dip mixture rests on a gray surface, evoking Vintage Southern charm, with a small green dish of paprika nearby.
Beat the soft cream cheese and mayonnaise together first, until the mixture turns smooth.
A gloved hand mixing shredded cheese and ingredients in a bowl on a gray surface, crafting a classic Vintage Southern pimiento cheese dip, with a small dish of paprika nearby.
Doing this before the cheese goes in keeps everything from clumping later.
  • Stir in the cayenne, a little onion powder and garlic powder, and salt and black pepper to taste.
  • If the cream cheese is still cold and stiff, ten seconds in the microwave loosens it right up.

Fold in the cheese and pimentos

Add the grated cheddar and the drained pimentos, then fold gently with a spatula until the diced pimentos are spread evenly through. Drain them well first, or the extra liquid will leave the dip loose. Stop while there is still some texture, unless your crew likes it smoother. Taste, and tweak the heat with more cayenne, a dash of hot sauce, or a chopped pickle.

Cover, chill, and serve

A hand holds a chip with creamy Southern Cheese Dip above a bowl of dip topped with sliced jalapeños.
Cover and refrigerate for at least an hour so the cheese sets up and the seasoning settles.
  • Pull it out about 30 minutes before serving so it softens for scooping.
  • Serve it cold with crackers or celery sticks, spread thick on white bread, or melted into a grilled cheese sandwich with a dusting of paprika on top.
  • A leftover grilled pimento cheese sandwich, slow-toasted in butter, might be the best part of all.

Storage

A hand dips a cracker into a bowl of creamy Southern Pimiento Cheese Dip, topped with sliced jalapeños and paprika for a vintage-inspired snack.

Keep the pimento cheese in an airtight container in the fridge for up to five days. Give it a quick stir before serving to bring back that smooth, creamy texture. I would skip the freezer, though, since the cream cheese and mayo turn grainy once they thaw.

This one is great to make ahead, so I often make homemade pimento cheese a full day early, and the flavor only deepens overnight. If it sets too stiff in the cold, leave it out for a few minutes, and it loosens back into a soft, creamy pimento cheese spread.

Can I use pre-shredded cheese?

You can, but I would not recommend it. Pre-shredded cheese is coated to keep the strands from sticking together, which can leave the pimento cheese a little grainy instead of smooth and creamy.

Why is my dip too dry or too runny?

A dry batch usually means it needs a little more mayonnaise, since different cream cheese brands can vary slightly in texture. If it turns out too loose, excess moisture from the pimentos is often the culprit. Letting it chill for another hour will usually help everything come together.

Can I use roasted red peppers instead of pimentos?

You can, but the flavor will be a little different. Jarred pimentos are the traditional choice and have a mild sweetness that works well in classic pimento cheese. Roasted red peppers bring a deeper flavor and can be slightly smokier.

Cranberry Fluff Salad

Sweet pineapple, tart cranberries, and soft marshmallows folded into a creamy salad that shows up on our table every holiday. This cranberry fluff salad takes about ten minutes to put together. My kids ask for it before they even sit down.

A bowl of pink cranberry fluff salad topped with cranberries, pecans, and marshmallows, with ingredients nearby.

I have been making fluff salads for years, but this cranberry one always wins out. Cranberry fluff salad became popular in the 1960s and 1970s, when fluff salads made with marshmallows, canned fruit, and whipped toppings became a holiday staple. These recipes were affordable, easy to make, and perfect for feeding a crowd. Cranberries were a natural addition because they were already a Thanksgiving side dish and Christmas dinner favorite, adding a bright, tart flavor to balance the sweetness. Today, cranberry fluff salad remains a nostalgic holiday tradition, and this version still makes it to our holiday table every single year.

What I love about this salad is how the tart cranberries cut right through all that creamy sweetness. All that Cool Whip makes it soft and rich, while the crushed pineapple adds little bursts of juice. Mini marshmallows melt into the cranberry mixture just enough to go pillowy, and the chopped pecans on top give you something to crunch. If you like this kind of sweet and tart side dish, my Ambrosia Fluff Salad is the next one to try.

The first few times I made this, I figured it would be too sweet for me. The kids loved it right away, so I kept making it, and somewhere along the line, it grew on me, too. The cranberries are what saved it. Without that sharp bite, the whole thing would be one note, but the fresh cranberries keep it bright and stop it from feeling heavy.

My husband is the one who insists on extra pecans, so I always set aside a handful for his bowl. By the time everyone has served themselves, the pecans on top are usually gone, and I am happy with the creamy cranberry base underneath. That part suits me fine.

This is one of those sides that I rely on every holiday because it never lets me down. It comes together in a food processor and a large bowl with no cooking at all. The best part? I can make it ahead while I focus on everything else in the kitchen. Trust me, the bowl is always scraped clean by the end of the meal, which tells me all I need to know. Let me walk you through what goes into it.

Ingredients

A bowl of pink cranberry fluff salad topped with cranberries, chopped pecans, and mini marshmallows.

You will need a bag of fresh cranberries, chopped in the food processor so they stay in small bits rather than puree. A little sugar tames the cranberries and brings out their sweetness. Softened cream cheese and Cool Whip give the salad its creamy body, though whipped cream works too. Let both warm up before you start so everything blends smooth. Drained crushed pineapple adds bright pockets of juice, and mini marshmallows fold in soft and pillowy. Chopped pecans finish it off with a little crunch on top.

See the recipe card for exact quantities.

Top Tips for Cranberry Fluff Salad

Chop, don’t puree the cranberries: Pulse just until finely chopped so you keep some texture. Blending too much can make the mixture watery.

Let the cranberries sit with sugar: Giving them time to rest helps soften their sharpness and improves the overall flavor.

Drain the pineapple well: Removing excess liquid keeps the salad thick and prevents it from becoming too loose as it chills.

How to Make Cranberry Fluff Salad?

A bowl of pink cranberry fluff salad topped with cranberries, chopped pecans, and mini marshmallows.

This easy cranberry fluff salad comes together fast with no cooking, just a quick chop, a good mix, and a few hours in the fridge to set. Here is how I make this salad:

Prepare the cranberries

A glass bowl filled with a chunky red mixture, resembling cranberry relish, on a white surface.
Add the cranberries to a food processor.
A glass bowl with chopped red fruit and a mound of white sugar on top, set on a white surface.
Pulse until finely chopped
  • Stop before they turn to mush, since you want small bits and not a puree.
  • Move the chopped cranberries to a bowl, stir in the sugar to sweeten them, and set it aside.

Make the creamy base

Clear glass bowl with fluffy, whipped cream or frosting mixture against a white background.
Beat the softened cheese in a large bowl until it is smooth and creamy
A glass bowl filled with fluffy whipped cream on a white surface.
Then, gently fold in the Cool Whip.
  • Cold cheese fights you here, so make sure it sat out long enough to soften first.
  • Folding instead of stirring keeps all that air in, so scrape the bottom and do not leave streaks.

Add the mix-ins

Glass bowl with whipped cream, crushed pineapple, mini marshmallows, and a red fruit mixture on top.
Add mix-ins.
A glass bowl filled with a pink, fluffy dessert mixture containing small white marshmallows.
Stir them together.
A glass bowl filled with pink whipped salad, topped with mini marshmallows and chopped pecans.
Add a bit more toppings.
  • Add the drained crushed pineapple tidbits and miniature marshmallows, then fold them in until everything is combined.
  • Make sure the pineapple is well drained, or the extra liquid will thin out the salad.
  • Now stir in the cranberry mixture you set aside so the color streaks all the way through.

Chill before serving

Cover the bowl and refrigerate the salad for at least 4 hours, and overnight is even better. The chill time lets the marshmallows soften and the flavors come together. The longer it sits, the more the cranberries settle into that creamy base.

Serve

A bowl of pink cranberry fluff salad topped with cranberries, chopped pecans, and mini marshmallows.

Right before serving, scatter the pecans or walnuts over the top so they stay crunchy. Give the salad a gentle stir if it has separated at all in the fridge. Serve it cold, straight from the bowl, as a side dish or dessert.

Storage

A bowl of pink Cranberry Fluff Salad topped with cranberries, marshmallows, and chopped pecans.

Keep any leftover salad in an airtight container in the refrigerator for up to three days. The marshmallows will keep softening over time, so the texture turns more pillowy the longer they sit. Give it a gentle stir before serving again to bring everything back together.

This salad is a great make-ahead dish, since it needs a few hours in the fridge to set anyway. I like to put it together the night before a holiday dinner and let it refrigerate overnight so it is ready to go. Just hold off on the pecans until serving so they keep their crunch.

Can I use canned cranberry sauce instead of fresh cranberries?

You can, but the results will be different. A 15-ounce can of whole-berry cranberry sauce works as a convenient substitute if you're short on time. Keep in mind that it will make the salad sweeter and much smoother. For the best balance of tart flavor and texture, fresh or frozen raw cranberries are the better choice.

Why is my cranberry fluff salad watery or runny?

Too much liquid is usually the reason. Be sure to drain the crushed pineapple well before adding it to the bowl. If you're using fresh cranberries mixed with sugar, pour off any extra liquid that collects before folding in the Cool Whip or whipped cream. These simple steps help keep the salad thick, fluffy, and creamy.

How long can cranberry fluff salad sit out at room temperature?

Because cranberry fluff salad is made with Cool Whip or whipped cream, it should not sit out for more than 2 hours at room temperature. If you're serving it outdoors on a warm day above 90 F, refrigerate it after 1 hour. To keep it fresh and safe to eat, store the salad in the refrigerator until you're ready to serve it and return any leftovers to the fridge promptly.

Crockpot Sausage and Peppers

This slow cooker Italian sausage and peppers is the kind of recipe that does all the work while you do everything else. Just because it's summer, doesn't mean my crockpot goes out of commission - and this easy crockpot sausage and peppers recipe shows exactly why it's the MVP for busy summer days.

Two sausage and pepper sandwiches in buns on a white plate, with sliced peppers and onions, in front of a slow cooker.

Summer days are full of activities. There's camp or outings in the morning, usually pool or water somewhere, and by the time dinner rolls around, no one has energy to think about cooking. This is how this crockpot sausage and peppers recipe came to be.

One busy day in late June, I realized I had no dinner plans or ideas whatsoever. I opened the fridge, and my eyes fell on a package of sausages and peppers that were beginning to soften around the edges. I always have some frozen buns in the freezer, so the idea for sausage and pepper hot dogs started coming together.

There was only one problem: I had no time to cook. That's when i decided to see if the crockpot could help me cook the sausage and peppers with the least hands-on work possible. And boy, did it deliver.

My family could eat Italian sausage links every single week and never complain. This recipe has appeared in our kitchen long enough that Leo and Lin know exactly what's cooking the moment they see the sausage links and marinara.

If I open the freezer and see sausage links, and there are hot dog buns sitting in the pantry, I don't even think about it anymore, I just make it. My husband knows this about me now.

One time, I was working on processing images from my recipe shoot and he arrived from work earlier than usual. He had a big smile on his face and a paper bag from the store. He took out the slow cooker and had all the ingredients laid out, especially the sausage links and the hot dog buns. He knew exactly what I'd been craving without me even saying it, and honestly, that moment felt just as comforting as the meal itself.

You brown the sausage links, throw them in the crockpot with marinara and a handful of ingredients, and come back to a dinner that tastes like it simmered all day because it did. Serve it on hot dog buns and you have a meal the whole family will ask for again and again.

We also love having the leftovers for afternoon snacks the next day, especially when the sausages have soaked up even more of that sauce overnight and taste even better than they did fresh.

Another crockpot recipe that's as comforting is my crockpot chicken and rice, it only needs 5 ingredients!

Ingredients

Two packs of Italian sausage, bell peppers, onions, garlic, oil, spices, and a jar of marinara sauce on a counter.

Using good-quality Italian sausage links makes a big difference because they bring built-in seasoning, so you don't need much else to build flavor. Bell peppers and onions make up the base and cook down into the sauce as everything simmers. Using a mix of pepper colors gives a better balance of sweetness and flavor. Marinara sauce ties everything together and creates the cooking liquid. It coats the sausage and vegetables as they cook, turning into a thicker, more concentrated sauce over time.

See the recipe card for exact quantities.

Top Tips for Crockpot Sausage and Peppers

Don’t overcrowd the skillet when searing: Give the sausage space in the pan so it browns instead of steaming. If needed, sear in batches for better color and flavor.

Slice peppers evenly: Keeping the strips similar in size helps them cook at the same rate, so you don’t end up with some too soft and others still firm.

Let it sit before serving: After cooking, let everything rest for 5–10 minutes so the sauce thickens slightly and coats the sausage and vegetables better.

How to Make Crockpot Sausage and Peppers

Two sausage sandwiches with grilled peppers and onions on a white plate, placed on a woven placemat.

This crockpot sausage and peppers is rich, saucy, and full of flavor, with tender sausage and soft peppers that hold their shape and pair well with bread or rice.

Sear the sausage

Five browned sausages cooking in a stainless steel skillet on a marble countertop.
Brown the sausages.

Skipping the browning step might seem like a shortcut, but it leaves the sausage tasting flat instead of rich. Taking a few minutes to sear the links first builds better flavor.

  • The sausage does not need to cook through here; you are only building color and flavor on the outside.
  • If the sausage steams instead of browns, let the pan get hotter before adding the next batch.
  • If the links start splitting badly, lower the heat slightly so they do not burst before slow cooking.

Add the vegetables and sauce

A crockpot sausage and peppers recipe featuring sliced onions, bell peppers, tomato sauce, minced garlic, and spices in a slow cooker on a marble surface.
Layer the base ingredients in the slow cooker.
  • The sauce should coat the vegetables without looking watery, since the peppers and onions will release more liquid later.
  • Break up any clumps of garlic so the flavor spreads evenly through the sauce.

Add the sausage

Sausages arranged in a slow cooker on top of sliced onions and peppers on a marble countertop—an easy crockpot sausage and peppers recipe perfect for effortless weeknight dinners.
Place the sausage on top so it cooks evenly.
  • Keep the sausage mostly on top so it holds its shape and does not get buried in the sauce.
  • Add any browned pan juices from the skillet as long as they are not burnt.
  • Avoid pressing the links too deep into the sauce, or they may lose more of their seared texture.

Cook until tender

Crockpot sausage and peppers with onions in a rich red sauce fill the slow cooker, ready to serve on a marble surface.
Let everything cook until the sausage is done and the vegetables are soft.
  • The peppers should be tender but still visible, not completely broken down.
  • The sauce will thin slightly as the vegetables release moisture, but it should still look rich and spoonable.
  • If the mixture looks too watery near the end, leave the lid slightly ajar for the last 20 to 30 minutes.

Finish and serve

Stir and serve while hot.

Make it Better

Two sausage and peppers sandwiches with grilled onions served on a white plate—a classic recipe perfect for fans of hearty Crockpot meals.

You can change up the sausage depending on what you have or the flavor you want. Italian sausage works well, but hot links, bratwurst, smoked sausage, or even chicken apple sausage all work in this recipe. Some varieties come pre-seasoned or filled, which can slightly change the overall taste without needing extra ingredients.

How you serve it also changes the feel of the dish. For a more casual option, serve the sausages whole in hot dog buns so everything stays easy to assemble. If you want something more filling, serve it over mashed potatoes and slice the sausage before cooking so it mixes more evenly with the sauce and vegetables.

Storage

Two sausage and pepper sandwiches with onions on a white plate in front of a slow cooker, perfect for enjoying this classic crockpot sausage and peppers recipe.

Store leftovers in an airtight container in the fridge for up to 3–4 days. The sausage and peppers will continue to soak up the sauce, so the flavor deepens over time.

For make-ahead, you can prep everything in advance by slicing the peppers and onions and storing them in the fridge a day ahead. You can also fully cook the dish and reheat it later, which works well since it holds its texture and flavor. Reheat on the stovetop over medium heat or in the microwave until heated through.

A classic cheese ball coated in bacon and chives with a hint of ranch, served alongside round and square crackers on a white plate.
[feast_advanced_jump_to]

She would have this whole platter of cheese ball appetizers with different kinds of crackers to choose from, and I'd always end up going back for more than I'd like to admit. If you love a classic savory cheese ball, my Southern cream cheese ball with bacon is the one that started this whole obsession for me.

When I learned that the retro recipe tastes even better with ranch seasoning, I became obsessed with serving them whenever I host. The ranch just ties everything together in a way that makes it hard to stop at one cracker. It's smoky, sharp, savory, and rich all at once. This recipe is not only a crowd favorite during the later months of the year, but especially when the big game is on.

A ranch-flavored cheese ball coated in bacon and chives, served with round and square crackers on a white plate.

I love making this ahead because it needs four hours in the fridge to firm up anyway, so I can prep it the night before and just pull it out when guests arrive. It takes almost no effort to put together and looks like it took considerably more. Every time I serve these, someone asks for the recipe, and my aunt would be proud. And if you want to keep the cheese ball spread going in a completely different direction, my pineapple cheese ball with pecans is the sweet and savory one that always surprises people.

Ingredients

Ingredients for Bacon Ranch Cheese Balls, including bacon bits, chives, cream cheese, seasonings, and shredded cheese, are arranged on a white surface.

The base is cream cheese, so it needs to be fully softened before mixing or the texture can turn lumpy. Crispy bacon adds the best flavor and texture, while ranch seasoning brings in the garlic, herbs, and salt without extra measuring. Shredded cheddar gives the cheese ball a sharper bite and helps balance the creamy base, with sharp cheddar working especially well if you want a stronger flavor.

See the recipe card for exact quantities.

Top Tips for Making a Bacon Ranch Cheese Ball

Use block cheese if you can: Freshly shredded cheddar blends better into the cream cheese and gives the cheese ball a better texture than pre-shredded cheese.

Cook the bacon until crisp: Softer bacon can turn chewy once mixed into the cheese ball, so crisp bacon works better for both the filling and coating.

Chop the chives finely: Large pieces can make the outside coating uneven, while finely chopped chives stick better and give cleaner flavor in each bite.

How to Make a Bacon Ranch Cheese Ball?

A ranch-infused cheese ball coated with bacon and chives, served with round and rectangular crackers on a white plate.

This bacon ranch cheese ball has a creamy center, crispy bacon, and a savory ranch flavor that makes it easy to serve with crackers, pretzels, or fresh vegetables.

Mix the cheese ball base

A glass bowl of creamy ranch cheese mixture, with bowls of chopped bacon and chives in the background—perfect for making delicious cheese balls.
Mix together the bacon, cream cheese, and cheddar.

Combine a quarter of the bacon with the cream cheese and cheddar. Beat until there are no streaks of white; it should look uniform and slightly stiff.

  • If the mixture feels stiff, let the cream cheese soften a little longer before shaping.

Add the seasoning

Creamy mixture in a glass bowl with crumbled bacon; chopped chives in a bowl nearby, perfect for making flavorful bacon ranch cheese balls.
Add the ranch seasoning, garlic powder, and onion powder.

Stir in the ranch packet, garlic powder, and onion powder.

  • Taste before adding any salt. Between the ranch, bacon, and cheddar, it's usually already there.

Shape and chill

A ball of dough in a glass bowl, with bowls of chopped chives, bacon, and other ingredients nearby—perfect for crafting savory ranch cheese balls.
Form into a ball and let it chill.

Scoop onto plastic wrap, shape into a ball, wrap it tight, and refrigerate for at least 4 hours.

  • The cheese ball should feel firm before coating, not soft or sticky.

Coat the cheese ball

Prepare the bacon and chives coating and the chilled cheese ball.

Coat the ball evenly.

Spread the remaining bacon and chives on a plate and roll the chilled ball through until covered.

Serve

A fork holds a bite of cheesy bacon ball; ranch-flavored crackers and cheese balls are on a plate in the background.

Set on your serving plate and bring out with crackers.

  • Keep it chilled until close to serving so it holds its shape.

Storage

A ranch-infused cheese ball coated with crispy bacon and fresh chives, served with round and square crackers on a white plate.

Store the bacon ranch cheese ball covered in the refrigerator until ready to serve. Keep it wrapped tightly in plastic wrap or in an airtight container so it does not dry out or pick up fridge odors.

For the best texture, eat it within 3 to 4 days. If you are making it ahead, wait to roll it in the bacon and chive coating until closer to serving so the outside stays fresher and less soft.

Why is my cheese ball too soft?

The cream cheese was likely too soft before mixing, or it didn't chill long enough. Refrigerate for a few more hours until it firms up before coating and serving.

Can I use a different cheese?

Yes. Colby Jack, Monterey Jack, or Pepper Jack all work well here. Sharp cheddar gives the strongest flavor, so I'd recommend keeping it if you have it on hand.

How long can a cheese ball sit out at room temperature?

No more than 2 hours for food safety. If you're serving it at a party, return it to the refrigerator between servings.

Can I make this into mini cheese balls?

Yes. Roll the mixture into smaller bite-sized portions and coat them the same way. They're great for parties and easier for guests to serve themselves.

Vintage Southern Cream Cheese Ball With Bacon Bits

Some appetizers look impressive and taste forgettable. This Southern cream cheese ball is the opposite. Creamy, savory, and rolled in toasted pecans, it's the kind of thing guests come back to the table for all night.

A hand dips a round cracker into a southern cream cheese ball recipe, surrounded by crackers, tomatoes, radishes, and cucumber.

Southern appetizers always feel generous. They're made to be shared, made to sit on a table surrounded by people who aren't in a hurry, and this cheese ball fits right into that.

I am deeply in love with Southern recipes of all kinds, and I've been making my way through cheese ball appetizers in particular. Cheese balls became popular in the 1940s, when war wives cooking at home needed to make do with meager options for entertaining. They then sprung back into the 1970s when cream cheese everything was back in style. And this Southern version just may have been the most popular one.

Pecans are one of my favorite nuts and they show up everywhere in Southern cooking for good reason. I love them in pecan pie casseroles, but also sprinkled liberally on my French toast.

But the beauty of pecans is that they aren't just limited to sweet dishes. They add crunch on the outside, and paired with smoky bacon and green onions, they create the kind of flavor combination that keeps people coming back for another cracker.

The mix of ingredients sounds simple, because it is. This is the appetizer I bring when I need something that travels well and holds up in the fridge. It has that rich, savory flavor that feels right at home on a snack table surrounded by good company.

Cheese ball coated in nuts, inspired by a Southern cream cheese ball recipe, served with crackers, tomatoes, radishes, and cucumber slices on a platter.

My son usually asks for extra bacon on the side when I make it, which always makes me laugh because the bacon is already mixed in, but he insists and at this point I just cook extra and don't argue.

I prep it the night before, pull it out when guests arrive, and it's always gone before I'm ready for it to be. If you want to try a twist on it, my pineapple cream cheese ball was one I was skeptical about at first, and it quickly became a close second favorite.

Ingredients

Five bowls display ingredients for a southern cream cheese ball recipe: chopped walnuts, green peppers, white powder, red bits, and cream cheese, all arranged on a vibrant red tiled surface.

Use softened cream cheese so the cheese ball mixes smoothly and shapes easily. Green onions add a fresh, mild bite that cuts through the richness without taking over.

Bacon gives the cheese ball its savory flavor, while pecans or walnuts if that's what you have, add crunch around the outside and make it easier to handle. Together, they keep the creamy center from feeling too heavy.

See the recipe card for exact quantities.

Top Tips for Southern Cream Cheese Balls

Start with softened cream cheese: This makes the mixture easier to combine and helps keep the texture smooth instead of lumpy.

Use finely chopped mix-ins: Smaller pieces of green onion and bacon distribute more evenly, so every bite has balanced flavor.

Toast the pecans first: Toasting the nuts for a few minutes brings out more flavor and gives the coating extra crunch.

Storage

Store the cheese ball tightly covered or in an airtight container in the fridge for up to 4–5 days. Keep it chilled until ready to serve so it holds its shape.

If making ahead, prepare it a day in advance and keep it wrapped in the fridge. Let it sit at room temperature for about 10–15 minutes before serving.

Can I make this without nuts?

Yes. You can skip the nut coating or roll the cheese ball in extra bacon, green onions, shredded cheese, or crushed crackers instead.

How do I keep the coating crunchy?

Add the nut coating close to serving if you want the best crunch. The cheese ball can still be made ahead, but the nuts soften slightly in the fridge.

How long can a cheese ball sit out?

Keep it out for no more than about 2 hours. After that, return leftovers to the fridge.

Vintage Pineapple Cheese Ball With Pecans

Sweet pineapple, creamy cheese, and crunchy pecans rolled into one appetizer that nobody sees coming but everyone keeps going back to. This pineapple cream cheese ball is one of those recipes that we love for summer picnics, holiday Potlucks, and more.

Cheese ball coated in nuts with a cherry on top, surrounded by crackers and rosemary on a wooden board—a delightful twist on the classic pineapple cheese ball recipe.
[feast_advanced_jump_to]

I first tasted this at my aunt-in-law's holiday celebration and I was skeptical the moment I saw it on the table. A cheese ball with pineapple in it didn't sound like something I needed to try. One bite completely changed that.

When I did some digging, I discovered that cheese balls rose in popularity in the 1940s, when women hosting wartime tried to make do with simple ingredients that were leftover from other dishes. They fell out of favor and then resurfaced in the 1970s, when they became the party appetizer du jour. I am not surprised that this little appetizer completely swept the country by storm - it's delicious and so easy to make! All you need is a pack of cream cheese and some extras.

The flavor of the cheese ball is unique. Of course, it's creamy, but also has tang from the walnuts, sweetness from the pineapple, and a bit of acidity. It works well with good old Ritz crackers, but also holds its own against fancier crackers. I love it on mini peppers, too.

I made my husband try it immediately and then went back for another piece before I'd even finished the first. I asked for the recipe before the night was over, put my own spin on it, and it has been on my radar for every get-together since. If you have already tried my Southern cream cheese ball and want something a little more unexpected, this is the next cheese ball recipe to make.

A pineapple cheese ball recipe topped with a cherry and coated in nuts, surrounded by crackers on a wooden board.

What gets me every time is how well the pineapple plays with everything else. It's sweet but not in a way that fights the cream cheese, and the pecans both inside and out give it enough texture that every bite has something going on.

This is a good break from my usual air fryer cheese bites, though honestly cheese balls are their own craving entirely. I make this a day ahead when I'm hosting so all I have to do is pull it out when guests arrive, and it never lasts long. My aunt-in-law was thrilled when I told her I'd been making my own version. I'm already planning to serve it at our next family gathering and see if anyone can guess the secret ingredient.

Ingredients

Five bowls with cherries, pineapple, cream cheese, chopped nuts, and a pinch of white spice on a tiled surface—perfect for assembling your favorite pineapple cheese ball recipe.

The cream cheese gives this pineapple cheese ball its rich, smooth base. Let it soften first so the pineapple and pecans fold in evenly without leaving the mixture stiff or lumpy.

Crushed pineapple adds sweetness and a little tang, but draining it well is what keeps the cheese ball from turning loose. Pecans add a nutty crunch through the filling and around the outside, giving each bite more texture.

See the recipe card for exact quantities.

Top Tips for Pineapple Cheese Balls

Drain the pineapple well: Press out as much liquid as possible before mixing. Too much moisture will make the cheese ball too soft to shape.

Start with fully softened cream cheese: This makes it much easier to mix everything evenly and keeps the texture smooth instead of lumpy.

Chill before serving: Giving it enough time in the fridge helps it firm up so it holds its shape.

How to Make Pineapple Cheese Balls?

Cheese ball with a cherry on top, inspired by a pineapple cheese ball recipe, surrounded by assorted crackers, honey, and raisins on a wooden board.

This pineapple cheese ball is creamy, slightly sweet, and crunchy on the outside, with crushed pineapple mixed into the filling and pecans coating the outside.

Mix the filling

A hand mixes ingredients in a bowl near bowls of cherries, chopped nuts, and crushed pineapple on a tiled surface—perfect for preparing a classic pineapple cheese ball recipe.
Add the cream cheese, crushed pineapple, chopped pecans, and garlic powder.

Combine the softened cream cheese, well-drained crushed pineapple, chopped pecans, and garlic powder in a mixing bowl.

  • The pineapple needs to be drained well, or the mixture can turn loose and watery.

Shape the cheese ball

Scoop the mixture onto a clean surface or a piece of plastic wrap, then shape it into a ball.

Coat with pecans

A hand rolls a pineapple cheese ball recipe in chopped nuts on a small plate beside a bowl with a wooden spoon.
Coat the ball with chopped pecans.

Spread the remaining chopped pecans on a plate, then roll the cheese ball over them until coated.

  • If the pecans are sliding off, chill the cheese ball briefly, then roll it again.

Chill before serving

A wooden board with crackers, a pineapple cheese ball recipe topped with a cherry, honey dipper, rosemary, and a bowl of raisins.

Transfer the cheese ball to a plate, cover, and refrigerate for at least 2 hours.

  • Let it sit at room temperature for a few minutes before serving if it feels too firm straight from the fridge.

Storage

A pineapple cheese ball recipe coated in nuts, topped with a cherry, surrounded by crackers and a honey dipper on a wooden board.

Store the cheese ball tightly covered or in an airtight container in the fridge for up to 4–5 days. Keep it chilled until ready to serve so it holds its shape.

If needed, you can make it a day ahead and keep it wrapped until serving. Let it sit at room temperature for about 10–15 minutes before serving .

Can I use fresh pineapple instead of canned crushed pineapple?

Yes, but chop it very finely and drain off any extra juice. Canned crushed pineapple is easier because the texture mixes more evenly into the cream cheese.

Can I make this without pecans?

Yes. You can use walnuts, almonds, crushed crackers, or extra shredded cheese for the coating instead. The texture will change, but it will still work.

How long can a pineapple cheese ball sit out?

Keep it out for no more than about 2 hours. Since it has cream cheese, it should go back in the fridge after serving.

Easy Cast-Iron Buffalo Chicken Tacos

Buffalo chicken tacos don't get easier than this. In 25 minutes, you'll have shredded chicken tossed in tangy, spicy buffalo sauce, stuffed into warm tortillas, and topped with whatever you like. It's exactly the recipe that saves busy parents like me on weeknights, a dish for grownups that (some) kids will appreciate.

Soft tacos filled with Buffalo Chicken, sliced red onions, green onions, and a creamy sauce on a white plate—perfect for those who love easy recipes.

Taco night is one of this family's favorite nights, and we've had a good rotation going for a while now, switching between slow cooker birria tacos and instant pot carnitas depending on the week.

Then I made these buffalo chicken tacos and the rotation got a new permanent member. Four taco nights in a row, Lin asked for these specifically, even though they're a bit "picy". That kind of feedback is hard to argue with. Then again, she also loves blue cheese, but she's a weirdo.

Four easy Chicken Tacos topped with shredded buffalo chicken, red onions, herbs, and cheese on a white plate, with extra toppings nearby—perfect for fans of simple Easy Recipes.

Lin loves hers overflowing with chicken. Leo likes less hot sauce, but with adding plenty of cheese in his. My husband and I make ours hotter by adding extra buffalo sauce and some peppers. Sometimes, if I don't feel like prepping everyone individual servings, I'll have a bowl of the chicken, a plate of warmed tortilla, and different toppings in small bowls.

The kids would have contests on who gets to make the best taco, and even if I'm not exactly part of that contest, I always end up making mine like I am. This is one of my favorite combinations, a cross between the classic Buffalo blue cheese combo and the tacos I love so much.

Ingredients

Ingredients for chicken wrap: raw chicken, seasonings, sauces, sliced onions, herbs, cheese, yogurt, and tortillas—perfect for making Easy Tacos or flavorful Chicken Tacos at home.

Using chicken breasts cut in half keeps this recipe lean while still shredding well after cooking. The flavor here is driven by the buffalo sauce, so the type you choose makes a big difference. Some are more vinegary while others lean thicker and slightly sweeter. Greek yogurt balances the heat from the buffalo sauce and gives the mixture a creamier texture without needing heavy ingredients.

See the recipe card for exact quantities.

Top Tips for Buffalo Chicken Tacos

Boost the heat: Use a spicy buffalo sauce or add a pinch of cayenne to the chicken seasoning so the spice builds right into the base.

Warm the tortillas before assembling: Heating them in a pan or microwave makes them softer and less likely to tear when filled.

Don’t oversauce the chicken: Add the buffalo mixture gradually so it coats the chicken without making the tacos too messy or soggy.

How to Make Buffalo Chicken Tacos

Four Buffalo Chicken Tacos with red onion, cilantro, and sauce on a white plate, surrounded by fresh cilantro.

These buffalo chicken tacos are easy to make. They're bold, creamy, and slightly spicy, with tender shredded chicken and fresh toppings that balance the heat in every bite.

Season the chicken

Two raw chicken breasts coated with spicy Buffalo Chicken seasoning rest on a white cutting board, ready to be transformed into flavorful Easy Tacos.
Add flavor to the chicken before cooking.
  • If the chicken is very thick, pound it slightly so it cooks more evenly in the skillet.

Cook the chicken

Two cooked, seasoned chicken breasts in a black cast iron skillet on a white background—perfect for making Buffalo Chicken Tacos or adding bold flavor to your next batch of Easy Chicken Tacos.
Cook the chicken until fully done and lightly browned.
  • Cook for 4 to 5 minutes per side, until the outside is lightly browned and the center reaches 165°F.
  • If the pan is too crowded, cook in batches so the chicken browns instead of steaming.

Shred the chicken

Shredded cooked chicken in a light green mixing bowl on a white background, perfect for making Buffalo Chicken Tacos or other easy chicken taco recipes.
Let the chicken rest, then shred it for the filling.
  • Resting helps keep the chicken from drying out when you pull it apart.
  • Use two forks to shred the chicken into bite-sized pieces.
  • If the chicken feels tough to shred, slice it first, then pull the smaller pieces apart.

Make the sauce

A glass bowl with orange Buffalo Chicken sauce and a metal whisk on a white background.
Combine the sauce ingredients until smooth.
  • The sauce should look thick enough to coat the chicken, not thin or watery.
  • If the yogurt looks slightly separated at first, keep whisking until the mixture comes together.

Coat the chicken

Shredded buffalo chicken in a glass bowl, coated with an orange-red sauce, perfect for easy recipes like chicken tacos, on a white background.
Mix the shredded chicken with the sauce.
  • The filling should be creamy and saucy without dripping heavily from the spoon.
  • If it looks too dry, add a small splash of buffalo sauce.
  • If it looks too loose, add a little more shredded chicken or Greek yogurt to thicken it.

Assemble the tacos

Easy Chicken Tacos with red onions, cilantro, and sauce on a white plate, set against a white background.
Build the tacos with the prepared filling and toppings.
  • Keep the toppings light enough that the tacos are easy to hold.
  • Add the crisp and fresh toppings last so they do not wilt into the hot chicken.

Serve

Soft Chicken Tacos filled with shredded chicken, sliced red onions, green onions, and crumbled cheese on a white plate—an easy recipe perfect for any meal.
Serve right away while everything is warm.

Storage

Two soft chicken tacos with shredded Buffalo chicken filling, sliced red onions, green onions, and cilantro on a white plate—perfect for those who love easy recipes.

Store leftover buffalo chicken in an airtight container in the fridge for up to 3–4 days. Keep tortillas and toppings separate so everything stays fresh and doesn’t get soggy.

You can reuse the chicken in a few easy ways. Add it to wraps or sandwiches, pile it over rice bowls, or use it as a topping for salads. It also works well in quesadillas or baked into a quick buffalo chicken flatbread for something different.

Can I use rotisserie chicken instead?

Yes. Shred it and toss it directly with the buffalo sauce and Greek yogurt. It cuts the cooking time even more and still works well.

What can I use instead of blue cheese?

If you don’t like blue cheese, shredded mozzarella or cheddar works well. You still get that creamy finish without the stronger flavor.

Can I use chicken thighs instead of chicken breasts?

Yes. Chicken thighs will be slightly more tender and juicy. Just cook them the same way and shred once done.
