It started the way a lot of my best recipes do. Whatever vegetables were starting to look at us funny, sweet potatoes that had been waiting their turn all week, and a can of black beans in the pantry. I love avocado, and I think it's one of the best fruits in the world. Avocado toast may just be the best breakfast toast to ever be invented, and I will die on that hill. I have an avocado toast with dukkah recipe and a tomato avocado salad with dukkah seasoning that I make constantly, but this avocado chicken salad recipe has been a recurring request at home for a few months now, and I feel like it's the perfect time to share it.

It's perfect on its own as a side for barbecue. It's also great on bread, especially croissants, on a picnic. It's nothing like the soggy mayonnaise salads you've seen before. The tomatoes, celery and and red onion add juiciness and acidity to the salad, breaking the creaminess of the avocado.

Fresh parsley finishes everything with a pop of color and freshness that makes the whole salad taste bright and light. The result is refreshing and zesty, a salad that is anything but boring.

The avocados have to be ripe, or this doesn't work. Underripe avocados won't blend smoothly, and you end up with chunks instead of that creamy dressing that coats everything. When I tried making this with avocados that were still too firm because I was impatient, the texture came out lumpy and grainy instead of smooth, and it just tasted like chunky guacamole mixed with chicken instead of an actual salad.

How to Make Crispy Sheet Pan Ground Beef Tochos?

These come together in two parts. First, you crisp the tater tots, then add the toppings and finish everything in the oven.

Prepare the oven and pan

Preheat your oven to 400°F. Line a large baking sheet with parchment paper to keep the tots from sticking and to make cleanup easier.

Cook the ground beef

While the tots are baking, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up into small pieces, until fully browned, about 7–10 minutes.

Drain off any excess grease. Stir in the taco seasoning and water, then cook for another 1–2 minutes until the beef is evenly coated and slightly thickened.

Assemble the tochos

Once the tater tots are done, remove the pan from the oven. Drizzle the queso over the tots, then spoon the seasoned beef evenly across the top.

Sprinkle the shredded Monterey Jack cheese over everything so it melts across the whole pan.

Bake and serve

  • 1 1 oz packet taco seasoning
  • 2 tablespoon water
  • 2 lb frozen tater tots
  • ½ cup queso cheese
  • 1 ¼ cups shredded Monterey Jack cheese
