  • 1 lb boneless skin-on fillet of salmon (you can also use skinless salmon)
  • 1 head cauliflower
  • ½ cup pitted green olives
  • 5 tablespoons olive oil
  • 2 tablespoons harissa
  • 2 teaspoons cumin
  • 1 teaspoons turmeric
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 lemon

Instructions

Prep the ingredients

  • First, you need to preheat your oven. For perfectly grilled Moroccan fish, I like to set the oven to 400F / 200C. This ensure the vegetables and fish cook fully on the inside, while getting a nice crisp on the outside.
  • Prepare your baking sheet by covering it with parchment paper or a reusable silicone mat.
  • Cut the cauliflower into florets. Slice the lemon into thin slices. If you want to portion out your salmon prior to baking, then do so now by cutting it into 2-inch-wide slices of about 5oz each.

Mix the marinade

  • In a small bowl, combine olive oil, harissa, turmeric, cumin, salt and pepper. Whisk well to combine.

Brush the salmon and cauliflower with the marinade

  • Brush the salmon liberally with the marinade. Keep it on a plate aside.
  • In a large bowl, combine cauliflower florets, olives and half the lemon slices (reserve as many lemon slices as you have pieces of fish, or 3-4 slices for a large salmon fillet). Drizzle the leftover marinade onto the vegetables, and mix well to combine.
  • Transfer the cauliflower florets, olives and lemon slices onto the baking sheet.

Bake vegetables

  • To ensure the best texture for your veggies, we start by baking them first and add the salmon after. Place the baking sheet into the oven and bake for 15 minutes.

Add spiced salmon to the oven

  • After 15 minutes, remove baking tray from the oven. Add salmon fillet onto the tray, nestling it among the cauliflower florets. Cover salmon with the reserved lemon slices that you had set aside.
  • Return baking sheet with cauliflower and salmon to the oven for 14 minutes.

Serve Moroccan salmon with cauliflower, lemon slices and olives on the side

  • After 29 minutes of total baking time, your fish should be slightly browned around the edges and flaky on the inside. The cauliflower should be easily pierced with a knife.
  • Once ready, remove the baking tray from the oven. Taste, and season with additional salt and pepper, if desired.
  • Serve your spiced Moroccan salmon with the baked lemon slices, and a mix of harissa and turmeric-tinged cauliflower and olives on the side. You may also enjoy a dollop of yogurt on the side.

  • Preheat an oven-safe pan to medium heat (I like a heavy le creuset or a cast iron pan for this). Add margarine/butter and oil, and when it's melted add the onion slices. Let onions saute for 10 minutes, until they have turned golden and begun to brown. Remove onions into a small bowl.
  • Layer rutabaga slices in the pan in one layer, then top with caramelized onions, and then finish with another layer of rutabaga slices (I don't like to go for more than two layers, because then the rutabaga slices in the middle don't caramelize; use two pans if need be). Cover with a lid and cook for 10-15 mins on medium heat, until rutabaga slices in the bottom have browned and the slices in the middle have steamed through.
  • Preheat oven to 375F on the grill setting.
  • Once the rutabagas in the bottom are nice and brown, pour three whisked eggs on the rosti - but make sure the rutabaga is very brown before doing so, because the caramelization is the best part. Transfer dish to the oven and cook for about 5 minutes, checking often, until the eggs have set and browned a bit in the top.
  • Sprinkle with salt and pepper and serve with a side salad.

  • ½ teaspoon salt
  • Freshly ground black pepper  to taste
  • 1 cup strained tomatoes or tomato sauce
  • 1 TB chipotle peppers in adobo sauce or 1 TB tomato paste + 1 teaspoon smoked paprika

Instructions

  • Preheat oven to 375F. Grease an oven-safe casserole dish or glass bowl, preferably with a lid. Wash cauliflower well. Grate cheese into a medium-sized bowl.
  • In another bowl, combine half the cheese with the cream, salt and black pepper. Using your hands, rub the cream and cheese mixture all over the cauliflower, ensuring it coats everything and gets between the florets and into the crevices. Place cauliflower into oiled dish.
  • Finely chop 1 tablespoon of smoky chipotle pepper in adobo sauce (about ¼ of a pepper with sauce). if you don't have a jar of chipotle peppers, have no fear - mix in 1 teaspoon of smoked paprika into 1 TB of tomato paste. Add chopped pepper and sauce to half a cup of strained tomatoes (or tomato sauce, if that's what you've got). With a spoon, pour the smoky tomato sauce over cauliflower, creating the effect of dripping blood.
  • Cover the casserole dish with a lid; if you don't have a dish with a lid big enough to cover your cauliflower, fashion a cover out of aluminum foil, but try to avoid touch between the cauliflower itself and the aluminum (it can smear the cheese and sauce off).
  • Bake in a preheated oven for 35 minutes. Test cauliflower by piercing it with a fork; if it goes through fairly easily or with just a bit of resistance, remove the lid and let the cauliflower finish baking for another 15 minutes, the last five on the grill/ broil setting. If cauliflower is still fairly firm, increase heat to 400F and let it cook with the lid for another five minutes before testing it again, and then continuing to cook for another 15 without the lid.

Whenever I make fish soup, I am always reminded of my grandmother’s kitchen. She had a special way of turning simple, everyday ingredients into something deeply comforting, and that’s a skill she passed down to me.

What stands out most is how she never let anything go to waste, especially when it came to fish. One of the reasons I love this recipe is that it embraces the philosophy of using the whole fish, a tradition I’m proud to continue. Whenever possible, I opt for salmon or a firm white fish like cod, halibut or haddock. These types of fish hold their shape well in the stew, and their mild flavor is perfect for the delicate broth. If I have fish heads or bones available, I use them to make my own fish broth, which really takes the flavor to the next level. This is not only more flavorful but also a sustainable and economical way to cook.

Now that I have a family of my own, I carry on that tradition, though, with the help of my Instant Pot. This fish soup has become a comforting staple in my household, delivering all the warmth and flavor of my grandmother’s original, but without the hours of simmering on the stove.

If you choose to use a whole fish, fillet the fish and remove the heads, spine, and tail. Add the removed bits to your Instant Pot, cover with water and cook for about 20 minutes.

After you finishing cooking the fish bones, discard and return broth to the pot.

While the instant pot is simmiring away on the fish, cut up all the veggies before tossing them into the instant pot. Try to cut everything into similar sizes to help the vegetables cook evenly.

If you don’t have an Instant Pot, don’t worry. You can still enjoy this comforting fish soup by making it on the stovetop.   • 500 g trout fillets cut into 2-inch pieces
  • 6-8 cups water
  • 2 small onions
  • 6 carrots medium

  • 2-3 whole peppercorns
  • 2 bay leaves
  • 100 ml vodka

Instructions

How to cook Instant Pot Ukha

  • If using a whole fish, fillet the fish and remove the fish head, the fish spine and tail.
  • Add fish head and fish spine (and fish tail, if available) to the Instant Pot. Cover with water and cook on high pressure for 20 minutes.
  • Drain the soup from the fish. Discard the fish bones, and return the broth to the Instant Pot.
  • Set the Instant Pot to sauté for 15 mins, and add potatoes. Bring to a boil.
  • Once boiling, add onions and carrots. Continue sautéing for at least 7 mins, adding time if needed.
  • Add fish fillets, salt, peppercorns, allspice and bay leaves. Close the Instant Pot lid and pressure cook for 4 mins.
  • Manually release pressure, open the lid and add vodka. Close the lid and leave it closed for at least 25 to 30 minutes before serving (this helps the alcohol evaporate and neutralizes the flavor, leaving a clear broth).

How to Make Ukha on the Stovetop

  • If using a whole fish, fillet the fish and remove the fish head, the fish spine and tail.
  • Add fish head and fish spine (and fish tail, if available) to a large pot with a heavy bottom. Top with enough water to cover, close with a lid and bring to a boil. Once boiling, reduce heat to low and cook for 40 minutes, until fish is completely falling apart.
  • Drain the soup from the fish. Discard the fish bones, and return the broth to the pot (you can also wipe out the pot at this stage; my grandmother used to cook ukha in a big black pot and she claimed that wiping the pot helps the soup get clear).
  • Bring the pot back to medium heat. Add the potatoes, cover the pot and bring to a boil.
  • Once boiling, uncover the pot and add the onion and carrots. Cover the lid and cook for 10 minutes on medium heat.
  • Add fish fillets, salt, allspice berries, bay leaves and whole peppercorns. Cover with a lid and cook and cook for 15 minutes, until the potatoes and carrots are tender and the fish is cooked through to an internal temperature of 165 F.
  • Open the lid and add vodka. Return the lid and leave it closed for at least 25 to 30 minutes before serving.

Serve Ukra

  • Serve ukha in individual bowls with fresh parsley, dill, lemon wedges and salt and pepper to taste.

Notes

To drain the soup, I remove the bones with tongs first, and then run the soup through a big colander with small holes.

The casserole is the heart of North American homes, and this hash brown casserole recipe is no exception.  Hashbrown chicken casserole is a comforting dish that combines crispy potatoes, tender chicken, and gooey cheese. With just a few simple ingredients and about an hour in the oven, you can create a delicious dinner that will satisfy the whole family - I promise, I have not heard one complaint while serving it.

This casserole combines the best of two worlds—crispy hashbrowns and juicy chicken. The sour cream and butter add richness, while the cheddar cheese creates a golden, bubbly top. The chicken soup mix adds so much flavor without extra work, though you can also use cream of chicken soup if you prefer!

Everyone loves cooking until it comes time to cleaning up afterwards. But you're in luck, because with this casserole, like my cheesy cabbage casserole, french onion chicken skillet, and breakfast rutabaga casserole, all you need to do is put the clean-licked plates and casserole dish into the dishwasher, press on, and you're done!  You just need to prep everything in one large bowl for easy cleanup. I recommend storing any leftovers of this cheesy chicken hash brown casserole in an airtight container or covered with aluminum foil in the refrigerator. It will stay fresh for up to 3 days when stored properly (I recommend not keeping it longer than you would normally keep cooked chicken). To reheat, I suggest placing individual portions in the microwave for 1-2 minutes or until heated through.

For longer storage, this casserole freezes well. I like to portion it into single servings before freezing. I use freezer-safe containers or zip-top bags and remove as much air as possible. You can keep the casserole in the freezer for up to 3 months.

Top Tip for Stressfree Easy Casserole

If you don't have frozen chicken breasts on hand, you can use rotisserie chicken leftovers! Simply shred it and mix it with the rest of the ingredients. It's a great way to use up cooked shredded chicken! I also recommend fully defrosting the hashbrowns before using them.

For the chicken, we recommend using bone-in, skin-on thighs, but chicken breasts can also work. This cut of chicken is preferred because it has a higher fat content, which keeps the meat tender and juicy during cooking. The skin helps lock in moisture, giving you a crisp, golden exterior while keeping the meat underneath incredibly succulent. The bone helps ensure the chicken stays moist and cooks evenly, making it an essential choice for a dish like this where flavor and texture are key.

Plus, chicken thighs have a more forgiving cooking time compared to breasts, reducing the risk of overcooking and ensuring a juicy, flavorful result every time, which is why I also use it for my French onion chicken skillet and buttermilk chicken recipe.

Directions to Prepare Moroccan Chicken and Date Recipe

Prepare the Skin-On Chicken Thighs

For this recipe, baking the chicken at 400°F (200°C) is ideal. And why 400°F and not 350°F?

The higher temperature helps achieve that beautifully golden-brown, crispy skin on the chicken thighs while ensuring the meat stays juicy and tender. At 400°F, the chicken cooks evenly, and the flavors from the marinade. Bake the chicken for about 50 minutes, basting it two or three times throughout to keep it moist and flavorful.

This will result in perfectly cooked chicken with a crispy exterior and juicy, tender interior. If you bake at a lower temperature like 350°F, the chicken will take longer to cook, and you might miss out on that crisp skin and caramelized edges.

Serve with Lemon and Cilantro

  • 6 chicken thighs, breasts or drumsticks  skin on and bone-in, scored a few times
  • 4 garlic cloves crushed
  • ¾ cup fresh cilantro leaves  chopped plus more for serving
  • 3 tablespoon red wine vinegar
  • 3 tablespoon olive oil
  • 1 cup pitted green olives
  • 5 tablespoons capers  plus 2 tablespoon of their brine
  • 1 cup Natural Delights Medjool dates pitted and quartered lengthwise (equal to 7 individual dates or 120g)
  • 2 bay leaves
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup dry red wine (120ml)
  • 2 large sweet potatoes or 4 small cut into wedges
  • 2 tablespoons date molasses can be replaced with pomegranate molasses, regular molasses or maple syrup

Instructions

  • Prepare a large baking pan or baking sheet by covering it with parchment paper.
  • If you have time to marinate the chicken, place chicken pieces in a large bowl and add the garlic, cilantro, vinegar, oil, olives, capers, Medjool dates, bay leaves, 1 teaspoon salt and ½ teaspoon black pepper. If you are cooking the chicken straightaway, then rub the chicken with the salt and pepper prior to placing it in the marinade of garlic, cilantro, vinegar, oil, olives, capers, dates and bay leaves. Stir everything to combine, cover the bowl and let the chicken marinate for at least 2 hours, and up to two days.
  • Preheat the oven to 400°F.
  • Spread out the sweet potatoes along the sides of the baking sheet. Arrange chicken thighs, along with all the marinade ingredients, letting it overlap with the sweet potatoes. Whisk together the wine and molasses and pour over the meat. Drizzle sweet potatoes with 3-4 TBs of olive oil and sprinkle generously with 1 teaspoon salt and ½ teaspoon pepper.
  • Place Ottolenghi Chicken Marbella with dates in the oven and cook for 50 minutes, basting two or three times, until the meat is golden brown on top and cooked through.
  • Remove tray from the oven, transfer chicken, sweet potatoes and everything else to a large platter, sprinkle with some fresh cilantro, and serve.

  • 3 Tbs rice wine vinegar
  • 1 Tb Sambal Oelek or Sriracha sauce
  • ¼ teaspoon Chinese five spice powder OR cumin
  • 3 Tbs water

Instructions

  • Press the tofu to drain between your hands to extract fluids. Alternatively, to get even more liquid out, place the tofu on a cutting board, top it with a plate, and top the plate with a heavy can. Leave to drain for 15 minutes.
  • Cut the tofu into small cubes, each slightly smaller than 1-square inch. You can also cut it into triangles for sandwiches.
  • In a square or rectangular bowl, make the marinade by whisking together soy, rice vinegar, hot sauce, spices and water. Add cubed tofu to bowl and toss the tofu in the marinade, covered with plastic wrap or lid, overnight or at least for a few hours (you can even let it marinate for a few days, soaking up flavour as it goes along, so don't hesitate to plan several meals from this tofu). Give the tofu pieces a stir every few hours, to ensure all are evenly coated with sauce.
  • Uncooked, marinated tofu stays good for 3 days in an airtight container.

Air Fryer Method

  • Preheat the air fryer to 375F. Spray with non-stick spray, or drizzle 1 teaspoon of oil. Remove the tofu from the marinade, arrange in the air fryer so there’s no overlap. Air fry tofu for 15 minutes, shaking the basket a couple of times in the process. You want your tofu nice and golden brown for this simple recipe.
  • Remove tofu from the air fryer and top with a few spoonfuls of the remaining marinade, if desired.

Pan Fried Tofu Method

  • Preheat a grill pan, a cast iron pan or a non-stick pan to high heat. Add 1 teaspoon of oil. Remove the tofu from the marinade, add tofu to the pan and grill 2-3 minutes per side. Turn each piece over to the other side, repeating until the tofu is browned on all sides and you can see grill marks if using a grill pan.
  • Top with a few spoonfuls of the remaining marinade, if desired.

Oven Baked Tofu Method

  • Preheat the oven to 400F. Cover a baking sheet with a silicone baking mat or parchment paper. Remove the tofu from the marinade, arrange on a baking sheet so there’s no overlap between the slices. Bake for 15 minutes on one side; flip over, and bake for an additional 15 minutes.
  • Top with a few spoonfuls of the remaining marinade, if desired.

Instructions

Preparing Vegetables

  • Preheat oven to 500F. Prep and grease two baking sheets. Lightly grease and prep a casserole dish.
  • Slice the zucchini, eggplants and potatoes into ½-inch slices.
  • Spread out the zucchini, eggplant and potatoes in a single layer across the baking sheets. Drizzle the vegetables with olive oil and sprinkle lightly with oregano, salt and black pepper.
  • Place baking sheets in the oven. Roast for 15 minutes, or until golden but still firm (you don't want the vegetables to fall apart as they'll keep cooking later). The eggplant will need another 5 minutes. Remove roasted vegetables from baking sheets and set aside.

Making the Lentils in Tomato Sauce

  • Making the Lentils in Tomato Sauce
  • Add the onions and saute until softened, about 2-3 minutes.
  • Add garlic, and saute for another 1 minute.
  • Add cooked lentils, diced tomatoes, 1 tablespoon dried oregano or double fresh, chilli flakes and ½ teaspoon salt and ¼ teaspoon black pepper to the pan.
  • Cook lentils in tomato sauce for 10-12 minutes, stirring often, until reduced and thickened.

Making the béchamel Sauce

  • Add butter to a small saucepan. Whisk in flour and cook, stirring constantly with a spatula or a wooden spoon, until a paste forms.
  • Cook for about 1-2 minutes on low-medium heat - watch so that the flour paste doesn't brown, as it will overcook.
  • Add hot milk, continuing to whisk constantly as the sauce thickens. Bring bechamel sauce to a boil. Season with salt and pepper and cook, whisking constantly, for 2 to 3 minutes.
  • Whisk the eggs in a medium bowl. To finish the bechamel sauce with eggs, take out a small amount of the sauce and add it to the whisked eggs; stir to combine. Pour the eggs into the bechamel sauce and let it cook for another 1-2 minutes. Remove the sauce from heat.

Assembling Vegetarian Moussaka

  • Assemble Vegetarian Moussaka in a 9 x 13 baking dish.
  • First, pour ½ cup of the lentil sauce on the bottom of the baking dish and spread.
  • Layer the eggplants on top. Then follow with a layer each of zucchini and potatoes. Sprinkle with half the feta cheese. Add the remainder of the lentil sauce. Repeat the vegetables in the same order.
  • Finally, pour bechamel sauce on top, and smooth it out with a spatula. Top with remaining feta and parmesan. Sprinkle with oregano.
  • Cover this Greek moussaka with foil without touching the top of the casserole (if this isn't possible, skip the foil).
  • Bake at 375F for 45 minutes. In the last five minutes, switch to broil to brown the cheese.
  • Serve hot for best results. However, Greek moussaka will slice more neatly after it has had time to cool - so if you are looking for neat slices, cut it out of the refrigerator, then reheat the slices individually.

  • 12 oysters
  • 3 garlic cloves minced
  • ¼ cup canola oil 60 ml
  • ½ cup bread crumbs 125 ml
  • ½ cup grated Parmesan cheese 125 ml
  • 3 large egg yolks
  • 2 TBs lemon juice
  • ¼ teaspoon  cayenne pepper
  • â…“ cup butter, melted  75 ml

For Mornay sauce:

  • ¼ cup butter 60 ml
  • ¼ cup flour 60 ml
  • 2 cups warm milk  500 ml
  • 1 teaspoon ground cloves
  • salt and pepper
  • ¼ cup whipping cream 60 ml
  • 1 cup grated Emmental cheese 250 ml

Instructions

To make oysters:

  • Preheat oven to 375F. Scrub and clean oysters and rinse them under cold, running water. To open oysters, comfortably hold an oyster, cup-side down, in one hand, preferably wrapped in a towel. Insert an oyster knife into the opening and run it from top to bottom of the hinge a few times to open. If this doesn't work, try twisting the knife in the center of the hinge. Remove the top shell of each oyster. Clean the oyster flesh from any remaining grit.
  • Slip the oyster knife under the oyster meat, loosening and removing it. Discard liquid. Keep meat intact, and set it aside. Keep bottom shells for baking.
  • In a saute pan over medium-low heat, saute garlic in oil for 1 min, until soft and fragrant. Set aside.
  • Arrange empty oyster shells on baking tray.
  • In a small bowl, combine garlic, breadcrumbs, ¼ cup of Parmesan cheese, egg yolks, lemon juice and cayenne pepper. Pour butter over-top and mix to combine.
  • Divide breadcrumb mixture between the oyster shells. Top each with reserved oyster meat. Cover with remaining Parmesan cheese.
  • Bake oysters for 6-8 minutes, or until golden brown.

To make Mornay sauce:

  • Meanwhile, prepare Mornay sauce. Melt butter in a large saucepan over medium-high heat. Stir in flour, constantly whisking, and cook for approximately 1 minute until a roux forms and turns golden brown. Slowly add milk and continue whisking until mixture is smooth and creamy. Add cloves, salt and pepper. Stir to combine.
  • Turn heat to low and add cream, until mixture can coat the back of a spoon. Add Emmental cheese. Continue to stir until the cheese ahs completely melted, and then remove from heat.

To serve:

  • Drizzle oysters with the sauce and serve Brunch Oyster Bake immediately.
  • Leftover sauce will keep in the fridge for 2 days.

Instructions
